Cauliflower Mash with Croutons & Dill

2 heads of cauliflower
Plain Greek yogurt
Breakdown cauliflower and place in a roasting pan
Drizzle olive oil over cauliflower
Salt and pepper to taste
Roast at 375 degrees until golden brown and tender (about 45mins)
Place cauliflower in a food processor
Add a good drizzle of olive oil
Add a cup of heavy cream
Add 1 cup of plain Greek yogurt
Pulse until well combined
Top with croutons and sprinkle with dill and enjoy!
