Ingredients

  • 2 heads of cauliflower

  • Olive oil

  • Salt and Pepper

  • Heavy Cream

  • Plain Greek Yogurt

  • Dill

Directions

  • Breakdown cauliflower and place in a roasting pan.
  • Drizzle Olive oil over cauliflower.
  • Salt and pepper to taste
  • Roast at 375 degrees until brown and tender (45 min)
  • Place cauliflower in a food processor
  • Add a good drizzle of olive oil.
  • Add a cup of heavy cream.
  • Add 1 cup of plain Greek yogurt.
  • Pulse until well combined.
  • Top with croutons and sprinkle with dill and enjoy!
