  • 1 1/2 Pounds Chicken Breast Fillets (about 4 Fillets) Cut Lengthwise Into 12 Strips

  • 1/2 Cup Lite Soy Sauce, Optional Tamari

  • 2 Tablespoons Sesame Oil

  • 2 Tablespoons Honey

  • 1 Teaspoon Balsamic Vinegar

  • 2 Cloves Garlic, Minced

  • 2 Teaspoons Freshly Grated Ginger

  • 2 Teaspoons Red Pepper Flakes

  • Canola Oil

  • Peanut Sauce
  • 1/2 Cup Natural Peanut Butter, Creamy or Crunchy

  • 1 Tablespoon Honey

  • 2 Tablespoons Lite Soy Sauce, Optional Tamari

  • 2 Teaspoons Freshly Grated Ginger

  • 2 Tablespoons Freshly Squeezed Lime Juice

  • 1 Clove Garlic, Minced

  • 1/2 Teaspoon of Red Pepper Flakes

  • 1/4 Cup Water


  • Prep Steps
  • Whisk together soy sauce, sesame oil, honey, vinegar, garlic, minced ginger, and red pepper flakes. Place chicken strips in marinade, cover, refrigerate, and let sit overnight or at least 5 hours.
  • Peanut Sauce: Add all ingredients to a food processor or blender and pulse until smooth. Add additional water if a thinner consistency is desired. Pour sauce into a glass dish or jar, cover and refrigerate until ready to serve.
  • Thread skewers with marinated chicken strips and refrigerate while heating the remaining marinate. Pour the remaining marinade into a small saucepan, bring to a boil, reduce heat and simmer until thickened.
  • Grill Steps
  • Lightly oil grates of grill with canola oil, and turn to medium-high heat. Once hot, add skewers and cook for about 3-4 minutes per side, or until chicken is cooked through and lightly browned, basting with the marinade as it cooks.
  • Serve Chicken Skewers with Peanut Sauce. Enjoy!
