Juniper Venison with Berry Bacon Salsa

Ingredients

  • 1 Venison Haunch Steak

  • 1 Garlic Clove

  • Juniper Berries

  • 1 Sprig of Rosemary

  • Olive Oil

  • Salt and Pepper

  • For the Salsa
  • 2 Rashers of Smoked Streaky Bacon

  • 6/7 Blackberries, 10 or so blueberries

  • A dozen stalks of flat leaf parsley

  • Olive Oil

  • Salt and Pepper

Directions

  • Mince the garlic clove in with the juniper berries, then cut in the rosemary leaves, salt and pepper until its almost a fine paste. Then mix in a few tablespoons of olive oil. Rub the venison with the marinade and leave it to sit for at least 5 hours.
  • Fire up the BBQ, bring it to temperature with the coals stacked to one side. Start with the bacon. Crisp up the bacon on the BBQ, starting on the cool side and moving it over the coals slowly until it’s sizzling. Once crispy, roughly chop it. Roughly mince the berries with a dozen stalks of flat leaf parsley. Crush a few of the berries in the process so they release their juices. Add a generous lug of olive oil, stir it in with the roughly chopped bacon.
  • Over the coal heavy side of the BBQ, sear the venison on each side, about a minute per side or more, depending on how you like it.
  • Carve, and dress with the salsa.
